Ingredients:
1 1/2 lbs russet potatoes, diced into 1/2″ cubes
1 lb smoked sausage, sliced
2 tbsp olive oil
1/2 tsp seasoned salt
1/2 tsp Italian seasoning
1/2 large red bell pepper, diced
1/2 large green bell pepper, diced
1 small onion, diced
Black pepper to taste
Shredded Parmesan cheese, for garnish
Directions:
Cook Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent and tender, about 5 minutes. Remove the onions from the skillet and set them aside.
Cook Potatoes: In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the diced potatoes, seasoned salt, Italian seasoning, and a pinch of black pepper. Cover the skillet and cook the potatoes for about 15 minutes, stirring occasionally to prevent them from sticking or burning.
Add Sausage: After the potatoes have started to soften, add the sliced smoked sausage to the skillet. Continue to cook for another 10 minutes, stirring occasionally to ensure even cooking.
Add Vegetables: Stir in the cooked onions and the diced red and green bell peppers. Cook everything together for another 5 minutes, or until the bell peppers are tender and slightly crispy.
Finish and Serve: Turn off the heat and garnish with shredded Parmesan cheese. Serve warm and enjoy!
