Ingredients:
2 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
1 cup sour cream
1 cup heavy cream
1/2 cup banana puree (about 2 ripe bananas)
1/2 cup crushed vanilla wafers
1/2 tsp ground cinnamon (optional)
Banana Pudding:
2 cups whole milk
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 tsp salt
1 tsp vanilla extract
2 ripe bananas, sliced
Cones:
12 ice cream cones (waffle or sugar cones)
Garnish (optional):
Whipped cream
Additional sliced bananas
Extra crushed vanilla wafers
Directions:
Banana Pudding: In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until the mixture thickens. Remove from heat and stir in the vanilla extract. Allow the pudding to cool, then refrigerate.
Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add the sugar and vanilla extract, continuing to mix until well combined. Slowly mix in the sour cream and heavy cream until the mixture is light and creamy. Fold in the banana puree, crushed vanilla wafers, and cinnamon (if using). Chill the filling for at least 30 minutes.
Assemble Cones: Stand the ice cream cones upright in a holder or a deep dish. Fill each cone about halfway with the cheesecake filling, followed by a layer of banana pudding.
Garnish: Top each cone with whipped cream, extra banana slices, and additional crushed vanilla wafers for garnish.
Serve & Enjoy: These Banana Pudding Cheesecake Cones can be served immediately or refrigerated until ready to enjoy.
