Ingredients:
1 lb large shrimp, peeled and deveined
1/4 cup honey
1/4 cup soy sauce
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon sesame oil
1 tablespoon vegetable oil
2 cups broccoli florets
1 red bell pepper, sliced
1 carrot, thinly sliced
1/4 cup green onions, sliced
Sesame seeds for garnish
Cooked rice for serving
Directions:
In a medium bowl, whisk together honey, soy sauce, garlic, and ginger.
Heat sesame oil and vegetable oil in a large skillet or wok over medium-high heat.
Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from the skillet and set aside.
In the same skillet, add broccoli, bell pepper, and carrot. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
Return the shrimp to the skillet, pour the honey garlic sauce over the top, and toss to combine. Cook for another 2 minutes until everything is coated and heated through.
Serve the stir fry over cooked rice and garnish with green onions and sesame seeds.
