No Bake Choclate Caramel Cheesecake

Ingredients:
1 ½ cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
½ cup cream cheese, softened
1 cup fresh strawberries, diced
½ cup graham cracker crumbs
Powdered sugar, for dusting
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy. Add the egg and vanilla extract, and continue to mix until well combined.
Beat in the cream cheese until smooth. Slowly add the dry ingredients to the wet ingredients, mixing just until incorporated.
Gently fold in the diced strawberries and graham cracker crumbs, being careful not to overmix.
Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are golden.
Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar before serving.
